Zucchini Casserole Recipe
Ingredients
4 medium zucchini, sliced into thin rounds
1 onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil (plus more for greasing)
1 cup shredded cheddar cheese (or mozzarella for a softer melt)
1/2 cup Parmesan cheese, grated
Salt & black pepper to taste
1/2 tsp dried oregano (optional, for a herby touch)
1/4 tsp paprika (optional, for color and mild warmth)
1/2 cup breadcrumbs (optional, for a crispy topping)
Methods & Instructions
Step 1 – Prepare the Oven & Dish
Preheat your oven to 375°F (190°C) .
Lightly grease a medium baking dish with olive oil to prevent sticking and give that golden edge we all love.
Step 2 – Cook the Veggies
Heat 2 tbsp olive oil in a large skillet over medium heat .
Add chopped onion and sauté for about 3–4 minutes , until softened.
Stir in minced garlic and cook for 30 seconds , just until fragrant.
Add sliced zucchini rounds, season with salt, pepper, oregano, and paprika (if using).
Sauté for 5–7 minutes , until zucchini is slightly tender but not mushy—they’ll cook more in the oven.
Step 3 – Assemble the Casserole
Transfer the sautéed mixture into your greased baking dish.
Sprinkle half of the cheddar cheese over the zucchini mix.
Add the remaining zucchini mixture on top, then sprinkle the rest of the cheddar and the Parmesan.
If using breadcrumbs, mix them with a teaspoon of olive oil and sprinkle evenly on top for a crispy crust.
Step 4 – Bake to Golden Perfection
Bake uncovered for 20–25 minutes , until the cheese is bubbly and lightly golden.
If you want an extra-crispy top, switch to broil for the last 2–3 minutes—but watch carefully so it doesn’t burn.
Step 5 – Serve & Love It
Let it cool for 5 minutes before serving—this helps the flavors settle and prevents cheese lava burns.
Serve warm as a side dish with grilled chicken, steak, or fish—or enjoy as a light vegetarian main with a fresh salad.
