Methods :
To prepare a big batch of marinated beef steaks, start with about 1.5 to 2 kilograms of steaks like the ones in your photo. In a large bowl, mix together five tablespoons of olive oil, four tablespoons of soy sauce, three of Worcestershire sauce, one tablespoon of balsamic vinegar or lemon juice, two tablespoons of mustard (preferably Dijon), six minced garlic cloves, one teaspoon of smoked paprika, some black pepper, salt, and optionally a tablespoon of honey or brown sugar for a hint of sweetness. You can also throw in a bit of rosemary or thyme for extra flavor.
Once your marinade is ready, coat the steaks thoroughly, making sure they’re well covered, then cover and refrigerate them for at least two hours—overnight is even better. Before cooking, let the steaks sit at room temperature for about 20 minutes.
Now choose your cooking method. For a smoky taste, grill the steaks on high heat for about 4 to 6 minutes per side. If you prefer using a skillet, heat a little oil in a heavy pan, sear the steaks for 4 to 5 minutes on each side, and for extra flavor, finish with a small knob of butter, a clove of garlic, and a sprig of rosemary in the pan. For thick cuts, sear them in a hot skillet first, then finish cooking in the oven at 200°C (about 400°F) for a few more minutes depending on how well done you like them. Once cooked, let the steaks rest for about five minutes before slicing—always cut against the grain for the most tenderness.
Serve the steaks with grilled vegetables, mashed potatoes, fries, or even a garlic butter sauce on top. It’s a rich and flavorful dish, perfect for feeding a hungry crowd.
