
Big Baked Apple Yogurt Cake
Ingredients:
For the batter:
- 4 large eggs
- 1½ cups granulated sugar
- 1 cup vegetable oil (or melted butter for richer flavor)
- 2 cups plain yogurt (unsweetened, full-fat preferred)
- 2 teaspoons vanilla extract
- 2½ cups all-purpose flour

Instructions:
- Preheat the oven to 180°C (350°F). Grease a large baking dish (about 9×13 inches).
- Prepare the apples:
- Toss chopped apples in lemon juice, cinnamon, and sugar. Set aside.
- Make the batter:
- In a large mixing bowl, beat the eggs and sugar until light and fluffy.
- Add yogurt, oil, and vanilla extract. Mix well.
- In a separate bowl, sift together flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until smooth.
- Assemble the cake:
- Pour half of the batter into the prepared baking dish.
- Spread the apple mixture evenly on top.
- Pour the remaining batter over the apples and smooth the surface.
- Bake:
- Bake in the preheated oven for 50–60 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Let it cool slightly. Serve warm or chilled. Great with tea or coffee.
