Nothing says comfort like a warm, juicy blackberry cobbler baked to perfection in a cast-iron skillet! This Southern-style dessert features a golden, buttery crust with a sweet and tangy blackberry filling. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream for the perfect treat!
Ingredients
For the Blackberry Filling:
- 4 cups fresh or frozen blackberries
- ¾ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- ¼ teaspoon ground cinnamon (optional)
- 2 tablespoons butter, cut into small pieces
For the Cobbler Crust:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup whole milk
- ½ cup (1 stick) unsalted butter, melted
Instructions
- Preheat & Prepare the Skillet
- Preheat your oven to 375°F (190°C).
- Place ½ cup melted butter into a 10-inch cast-iron skillet and swirl to coat the bottom.
- Prepare the Blackberry Filling
- In a medium saucepan, combine blackberries, sugar, lemon juice, vanilla extract, cornstarch, and cinnamon.
- Cook over medium heat, stirring occasionally, until the mixture thickens and starts to bubble (about 5 minutes).
- Remove from heat and stir in the butter. Set aside.
- Make the Batter
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Pour in milk and mix until smooth.
- Assemble the Cobbler
- Pour the batter over the melted butter in the skillet. Do not stir.
- Spoon the blackberry filling evenly on top of the batter. Again, do not mix—the batter will rise around the berries as it bakes.
- Bake the Cobbler
- Place the skillet in the oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Cool & Serve
- Let the cobbler rest for 10-15 minutes before serving.
- Serve warm with vanilla ice cream or whipped cream.
Ways to Customize Your Blackberry Cobbler
Add a Crunchy Topping – Sprinkle coarse sugar or cinnamon sugar on top before baking for a crispy finish.
Mix in Other Berries – Try adding raspberries, blueberries, or chopped strawberries for a mixed berry cobbler.
Spiced Flavor – A pinch of nutmeg or allspice in the batter gives a warm, cozy flavor.
Citrus Zest – Stir in a little lemon or orange zest for a refreshing twist.
Nutty Texture – Add chopped pecans or walnuts to the batter for extra crunch.
Storage & Reheating
To Store:
- Keep leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
To Reheat:
- Warm in the oven at 325°F (160°C) for 10-15 minutes or microwave for 30 seconds per serving.
