Ingredients:

  • Pasta:
  • 16 oz (450 g) elbow macaroni
  • Cheese Sauce:
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded Parmesan cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and black pepper to taste
  • Topping:
  • 1 cup breadcrumbs (preferably panko)
  • 2 tbsp unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried parsley (optional)

Instructions:

  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  1. Prepare the Cheese Sauce:
  • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until the mixture becomes golden and bubbly.
  • Gradually whisk in the milk and cream, ensuring no lumps form. Continue to cook, whisking constantly, until the mixture thickens and starts to bubble.
  • Reduce heat to low. Add the cheddar, Gruyère, and Parmesan cheeses, stirring until fully melted and smooth.
  • Stir in the Dijon mustard, garlic powder, onion powder, paprika, salt, and black pepper. Taste and adjust seasoning if necessary.
  1. Combine Pasta and Sauce:
  • Add the drained macaroni to the cheese sauce, stirring until the pasta is well coated.
  1. Prepare the Topping:
  • In a small bowl, combine the breadcrumbs with melted butter, Parmesan cheese, and dried parsley (if using).
  1. Bake:
  • Preheat your oven to 350°F (175°C).
  • Pour the mac & cheese into a greased 9×13-inch baking dish. Sprinkle the breadcrumb mixture evenly over the top.
  • Bake for 25-30 minutes or until the top is golden brown and crispy, and the cheese sauce is bubbly.
  1. Serve:
  • Let the mac & cheese sit for 5 minutes before serving. This allows the sauce to set slightly, making it easier to scoop.
