Red Snapper, Shrimp & Grits with a Cajun Cream Sauce

Ingredients:

4 red snapper fillets
1/2 lb shrimp, peeled and deveined
2 tbsp olive oil
Salt and pepper to taste
1 cup stone-ground grits
2 cups water
2 cups milk
1 cup shredded cheddar cheese
2 tbsp butter
Cajun Cream Sauce:

1 tbsp olive oil
1 tbsp butter
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1 cup heavy cream
1 tbsp Cajun seasoning
Salt and pepper to taste
Instructions:

In a pot, bring water and milk to a boil. Add grits, reduce heat, and cook until thick and creamy, about 20-25 minutes. Stir in cheddar cheese and butter. Season with salt and pepper.
Season red snapper fillets and shrimp with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook snapper fillets, skin-side down, for 3-4 minutes per side. Remove and set aside.
In the same skillet, cook shrimp until pink and opaque, about 2-3 minutes per side. Remove and set aside.
For the Cajun cream sauce, heat olive oil and butter in the skillet. Add diced bell peppers, onion, and garlic. Sauté until tender.
Stir in heavy cream and Cajun seasoning. Simmer until sauce thickens, about 5 minutes. Season with salt and pepper.
Serve snapper and shrimp over the cheesy grits, topped with Cajun cream sauce.
