Garlic Butter Steak and Potatoes Skillet

Ingredients

  • For the Steak:
  • 1 1/2 pounds (680g) sirloin steak, cut into 1-inch cubes
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh parsley, chopped
  • For the Potatoes:
  • 1 1/2 pounds (680g) baby potatoes, halved or quartered
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh parsley, chopped

Instructions

  1. Prepare the Steak:
1.1. Season the steak cubes generously with salt and black pepper. Set aside.
  2. Cook the Potatoes:
2.1. In a large skillet over medium-high heat, add the butter and olive oil.
2.2. Once the butter is melted, add the potatoes.
2.3. Season the potatoes with salt, black pepper, thyme, and rosemary.
2.4. Cook the potatoes, stirring occasionally, until they are golden brown and tender (about 15-20 minutes). You may need to cover the skillet to help the potatoes cook through. Once done, transfer the potatoes to a plate and set aside.
  3. Cook the Steak:
3.1. In the same skillet, add the olive oil over medium-high heat.
3.2. Add the steak cubes in a single layer. Do not overcrowd the skillet; cook in batches if necessary.
3.3. Sear the steak for about 2-3 minutes per side until they develop a nice crust and are cooked to your desired doneness.
3.4. In the last minute of cooking, add the minced garlic, thyme, rosemary, and parsley. Stir well to coat the steak with the garlic and herbs.
  4. Combine and Serve:
4.1. Return the cooked potatoes to the skillet and toss with the steak.
4.2. Adjust seasoning with more salt and pepper if needed.
4.3. Garnish with additional fresh parsley before serving.
