Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms


Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
2 tablespoons olive oil
4 slices bacon, chopped
1 small onion, finely chopped
3 garlic cloves, minced
8 oz mushrooms, sliced
4 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
Directions:
Prepare the Chicken:
Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
Remove the chicken from the skillet and set aside.
Cook the Bacon:
In the same skillet, add the chopped bacon and cook until crispy.
Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
Sauté the Vegetables:
Add the chopped onion to the skillet and cook until softened, about 3 minutes.
Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender, about 5 minutes.
Creamed Spinach:
Add the fresh spinach to the skillet and cook until wilted.
Pour in the heavy cream and stir in the grated Parmesan cheese.
Cook until the cream thickens and coats the vegetables, about 5 minutes.
Season with salt and pepper to taste.
Combine and Serve:
Return the cooked chicken breasts to the skillet, nestling them into the creamed spinach and mushrooms.
Sprinkle the crispy bacon over the top.
Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Serve:
Serve the smothered chicken hot, with the creamed spinach, bacon, and mushroom mixture spooned over the top.
