Ingredients:

  • Bread:
  • 4 slices of thick bread (such as Texas toast or country bread)
  • Sausages:
  • 2 sausages (breakfast sausage, Italian sausage, or your choice)
  • 1 tablespoon olive oil or butter for cooking
  • Eggs:
  • 2 eggs
  • 1 tablespoon milk (optional, for scrambled eggs)
  • Salt and pepper to taste
  • Cheese:
  • 4 slices of cheese (cheddar, Swiss, gouda, or your choice)
  • Butter:
  • 2-3 tablespoons butter for toasting
  • Condiments:
  • Ketchup and mustard for serving (optional)

Instructions:

  1. Prepare the Sausages:
  • Heat the olive oil or butter in a skillet over medium heat.
  • Cook the sausage slices until browned and cooked through, about 4-5 minutes, stirring occasionally.
  • Drain the sausages on paper towels to remove excess fat. Set aside.
  1. Prepare the Eggs:
  • In a bowl, beat the eggs with the milk (if using), salt, and pepper.
  • Melt a bit of butter in another skillet over medium heat.
  • Pour in the beaten eggs and cook, stirring gently, to make scrambled eggs, or leave them to cook as an omelet if preferred. Remove from heat and set aside.
  1. Assemble the Toasts:
  • If using cheese, place a slice of cheese on each slice of bread.
  • On two of the bread slices, layer the sausage slices and scrambled eggs. Top with the remaining slices of bread to form sandwiches.
  1. Toast the Sandwiches:
  • Melt a little butter in a large skillet over medium heat.
  • Place the sandwiches in the skillet and cook until golden brown and crispy on both sides, about 3-4 minutes per side. Press down slightly with a spatula to ensure even cooking.
  • You can also cover the skillet during cooking to help the cheese melt faster, if using.

  • Remove the sandwiches from the skillet and let them cool slightly on a rack to prevent sogginess.
  • Cut the sandwiches in half if desired and serve with ketchup and mustard, or other condiments of your choice.
