Sausage and Egg Stuffed Toast
Ingredients:
- Bread:
- 4 slices of thick bread (such as Texas toast or country bread)
- Sausages:
- 2 sausages (breakfast sausage, Italian sausage, or your choice)
- 1 tablespoon olive oil or butter for cooking
- Eggs:
- 2 eggs
- 1 tablespoon milk (optional, for scrambled eggs)
- Salt and pepper to taste
- Cheese:
- 4 slices of cheese (cheddar, Swiss, gouda, or your choice)
- Butter:
- 2-3 tablespoons butter for toasting
- Condiments:
- Ketchup and mustard for serving (optional)
Instructions:
- Prepare the Sausages:
- Heat the olive oil or butter in a skillet over medium heat.
- Cook the sausage slices until browned and cooked through, about 4-5 minutes, stirring occasionally.
- Drain the sausages on paper towels to remove excess fat. Set aside.
- Prepare the Eggs:
- In a bowl, beat the eggs with the milk (if using), salt, and pepper.
- Melt a bit of butter in another skillet over medium heat.
- Pour in the beaten eggs and cook, stirring gently, to make scrambled eggs, or leave them to cook as an omelet if preferred. Remove from heat and set aside.
- Assemble the Toasts:
- If using cheese, place a slice of cheese on each slice of bread.
- On two of the bread slices, layer the sausage slices and scrambled eggs. Top with the remaining slices of bread to form sandwiches.
- Toast the Sandwiches:
- Melt a little butter in a large skillet over medium heat.
- Place the sandwiches in the skillet and cook until golden brown and crispy on both sides, about 3-4 minutes per side. Press down slightly with a spatula to ensure even cooking.
- You can also cover the skillet during cooking to help the cheese melt faster, if using.
- Serve:
- Remove the sandwiches from the skillet and let them cool slightly on a rack to prevent sogginess.
- Cut the sandwiches in half if desired and serve with ketchup and mustard, or other condiments of your choice.
Tips:
- Variation: You can add sautéed vegetables (such as peppers or onions) or fresh herbs for extra flavor.
- Bread: Using slightly stale bread helps prevent sogginess during cooking.
