Rotel Pasta Recipe
Ingredients:
- 1 lb ground beef
- 2 16 oz blocks of Velveeta cheese (one white, one regular)
- 1-2 cans of Rotel tomatoes (use two for extra flavor)
- 1 box of penne pasta
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the penne pasta according to the instructions on the box until al dente.
- Drain and set aside.
- Season and Brown the Beef:
- In a large skillet over medium-high heat, add the ground beef.
- Season the beef with your preferred seasonings (e.g., Slap Ya Mama, garlic powder, onion powder, cayenne pepper).
- Cook the beef until it’s browned, breaking it up into small pieces as it cooks.
- If there’s excess grease, drain it off.
- Combine Rotel and Beef:
- Add the cans of Rotel tomatoes to the browned beef.
- Stir to combine and let it simmer for a few minutes.
- Add Velveeta:
- Cube the Velveeta blocks and add them to the beef and Rotel mixture.
- Stir continuously until the cheese is completely melted and the mixture is smooth.
- Combine Pasta and Sauce:
- Add the cooked, drained pasta to the skillet with the beef and cheese mixture.
- Stir thoroughly to ensure the pasta is evenly coated with the sauce.
- If the mixture is too thick, you can add a little milk to reach your desired consistency.
- Serve:
- Serve the Rotel pasta hot and enjoy!
