Cucumber, Onion, and Tomato Salad
Ingredients:
- 4 large cucumbers, peeled and sliced
- 4 large tomatoes, chopped
- 1 large red onion, thinly sliced
- 1/4 cup fresh parsley, chopped (optional for garnish)
- 1/4 cup fresh basil, chopped (optional for garnish)
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar or white wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 1 teaspoon sugar (optional, if you like a touch of sweetness)
Instructions:
- Prepare the Vegetables:
- Peel the cucumbers if desired. Slice them into thin rounds or half-moons.
- Chop the tomatoes into bite-sized pieces.
- Thinly slice the red onion.
- Mix the Vegetables:
- In a large mixing bowl, combine the sliced cucumbers, chopped tomatoes, and sliced red onion.
- Prepare the Dressing:
- In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, pepper, and sugar (if using). Adjust seasoning to taste.
- Combine and Toss:
- Pour the dressing over the vegetables and gently toss everything together until well coated.
- Chill and Serve:
- Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld. Give it another gentle toss before serving.
