Ingredients:

  • 2 sheets puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the chopped onion and sauté until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

    • Fold the squares in half diagonally to form triangles and press the edges with a fork to seal.

    • Transfer the hand pies to the prepared baking sheet.
    • Brush the tops with the beaten egg for a golden finish.
    • Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
