Ingredients:

1 tsp vanilla extract
2 large egg whites

Directions:

Preheat Oven: Preheat to 325°F (163°C). Line baking sheets with parchment paper.
Mix Ingredients: In a large bowl, combine coconut, sweetened condensed milk, and vanilla extract.
Beat Egg Whites: In a separate bowl, beat egg whites and salt until stiff peaks form.
Combine Mixtures: Gently fold the egg whites into the coconut mixture.
Form Cookies: Drop by tablespoonfuls onto prepared baking sheets.
Bake: Bake for 20-25 minutes until golden brown. Cool on wire racks.
